Sunchokes, also known as Jerusalem artichoke, are fleshy, root vegetables. It has a rich flavour and is eaten the same way as potatoes. 

It is one of the finest sources of dietary fibers and has zero cholesterol. It has inulin which is known to be an ideal sweetener for diabetics and dietetics. Sunchoke is rich in iron, calcium, magnesium, and potassium. 

 

How to prepare: wash thoroughly in cold water with a gentle scrub. You can peel the skin after. You can eat them raw in salads, boil & mash, roast, or sautee as potatoes. The advice only is: don't overcook, because they turn soft and mushy fairly quickly.

 

Storage: Raw sunchokes should be stored in the vegetable drawer in the fridge wrapped in paper towels or sealed in a plastic bag, or in a cool, dry, well-ventilated area away from light.
