Cauliflower is a low-carb vegetable! You can substitute legumes & grains with cauliflower to make your favourite dishes.
Use: versatile vegetable: you can eat it raw with your favorite dips; you can roast cauliflower steaks, make cauliflower fritters, hash browns, add to salads. You can make cauliflower rice, pizza crust, cauliflower hummus, cauliflower mash, and even mac and cheese to substitute legumes and grains.
Storage: whole heads of cauliflower can be kept in a loosely sealed plastic bag lined with paper towels to absorb excess moisture in the fridge for up to 14 days.
