Fresh carrots should be firm and crisp, with smooth and unblemished skin. Carrots have an earthy, sweet flavour. Carrots in general are extremely nutritious, and a great addition to a healthy diet. They are high in fiber, rich in vitamins C, K, and potassium. Purple carrots contain 9 times more polyphenol antioxidants in comparison to other colours.
Use: can be eaten raw, used in salads, and as relishes, served as cooked or roasted vegetables, glazed, and used in stews and soups. Carrot greens are just as edible as carrots themselves. Use them in sauces, pesto, toss and add to stews.
Storage: keep in refrigerator or root cellar for 1 to 3 months at about 4.4C temperature. Blanched carrots will keep in the freezer for up to 6 months. Cut off carrot greens, wrap them in a damp paper towel and keep them in the fridge. Use them quickly, otherwise, they will wilt and turn bad in less than a week.
